Why Should You Eat Brussels Sprouts?

In an article titled, Extraction and Identification of Health-Promoting Phytochemicals from Brussels Sprouts, it states that "the increasing incidence of chronic diseases such as cancer and cardiovascular disease has raised concerns about the importance of diet for human health, as many cases of cancer and cardiovascular disease are diet related"(Shanmugam et al.,2018).

 

The authors discuss in the article how brussels sprouts are rich in vitamin A, ascorbic acid, glucosinolates, and certain phenolic compounds. Also, that "higher intake of cruciferous vegetables like brussels sprouts may prevent certain types of cancers" (Shanmugam et al.,2018).

 

Lastly, stated by the authors is that "Consumption of brussels sprouts benefits human health through induction of glutathione S-transferases, which reduces the risk of an incidence of cancer. Another key mechanism by which vegetables provide health benefits is via binding of bile acids by dietary fiber and polyphenolics" (Shanmugam et al.,2018).
